Some fall or winter evenings call for a delicious potato dish. This is one of my favorites. It’s pretty easy to make and it tastes really good.
Ingredients
1/4 cup butter
1/2 sweet white onion (i.e. Walla Walla, Mayan, Vidalia)
2 tablespoons flour
1 cup milk
1/4 – 1/2 cup dry white wine
6 medium-sized Yukon Gold potatoes, thinly sliced
1 cup shredded provolone cheese
pepper and salt to taste
Directions
Place sliced potatoes in a buttered casserole dish. Set aside. Melt butter in a pan. Sauté the onions until they are translucent. Add flour and blend well. Slowly add milk, stirring constantly. Next add wine while continuing to stir. Bring to a slow boil.
Add cheese. Season to taste with salt and pepper. Continue to cook at a slow boil for 2 additional minutes while stirring. Pour the sauce over the potatoes. Bake in an oven for 1 hour at 350 degrees.
