Creamy Cheese Potatoes

It is really nice to have many different potato recipes during the winter months to add interest to the meal. On a cold winter night, our family enjoys creamy cheese potatoes. The potatoes taste great and the recipe is very simple. Feel free to adjust the recipe to fit the size of your family. I often increase all of the ingredients when the really hungry guys are scheduled to be home for dinner.

 

Ingredients
6 medium-sliced potatoes, sliced thinly
2 tablespoons butter
2 tablespoons flour
1 cup milk
1/4 cup dry white wine
1 teaspoon salt
1/8 teaspoon pepper or several twists of the pepper mill
1+ cup cheese, shredded white cheese (e.g. Monterey Jack).
1/4 cup sliced sweet onion
your favorite fresh herb or seasoning (e.g. parsley)

 

Directions
Place the potato slices into a greased casserole dish. Melt butter in a sauce pan; stir in flour. Mix well together. Gradually add milk to the flour/butter paste. Add wine. Bring the mixture to boiling, stirring constantly. Add seasonings. Then boil slowly for approximately two minutes.

Pour sauce over the potatoes. Bake potatoes at 350 degrees for one hour.
