Bleu Cheese Salad Dressing

I love salads, but I am not fond of most commercial salad dressings. I have a few of my own favorites that I have made for years. Two are included here: the French-Russian dressing and the Bleu Cheese dressing.

1 pint sour cream
1 cup mayonnaise
(you can substitute half with yoghurt and/or sour cream)
1 small clove garlic, freshly cut or mashed
1/4 cup crumbled bleu cheese
milk, a small amount for consistency
freshly ground pepper, a twist or two

In a small bowl or blender mix together the first four ingredients. Add a small amount of milk to make the dressing the consistency you desire. Next add pepper to taste.

We like our bleu cheese dressing somewhat thick, so I put in very little milk. If you like your dressing less thick, add more milk a little at a time. If you don’t want to use black pepper in your white dressing, use white ground pepper. Make any changes in this recipe to suit your individual taste or needs (e.g. substitute yoghurt or sour cream for some or all of the mayonnaise; add or decrease bleu cheese, etc.)
