When summer comes to our region and the grill gets revved up, our favorite beef meal is barbecued flank steak. This recipe has been a family favorite for over two decades—long before flank steak became popular (and more expensive!). With new potatoes, tossed salad, and cut-up fresh fruit, flank steak takes center stage. This recipe is for 1 flank steak, which is supposed to serve 4 people. I usually double the recipe, since we usually barbecue 2 flank steaks. If you have ravenous meat eaters in your midst, get another steak. One steak never seems to accommodate our family’s love for this tasty steak.
Ingredients
1 large flank steak
Marinade:
1/4 cup soy sauce
3 tablespoons honey
2 tablespoons vinegar
1 1/2 teaspoons garlic salt or 1 clove fresh garlic
1 1/2 teaspoons ginger
1 bunch green onions
1/2 to 3/4 cup olive oil
Directions
Combine the first 6 marinade ingredients; blend well. Slowly beat in the olive oil to the mixture. Place the flank steak in a shallow pan or dish. Pour the marinade over the steak. Soak the meat in the marinade several hours or overnight (turn meat over some time during the marinating process). Refrigerate during this process.
Grill about 5-8 minutes on each side for medium-rare done steak (timing varies with barbecues). Baste with marinade while cooking. Slice diagonally.
