Nowadays the only time we can find peppermint ice cream is during December. So this is a perfect dessert for one of those holiday desserts. It works very well for Christmas Eve, Christmas Day, or even New Year’s Eve. I have two peppermint ice cream desserts. This one is easy and quick to make. Kids of all ages love it. Well, who can resist Oreo cookies with peanuts and peppermint ice cream! This dessert can be made the day before serving. If made the same day, make certain you make it several hours prior to being served, so it will be firmly set.
Ingredients
1 package Oreo cookies, crushed
1/2 cup butter, melted
1 cup dry peanuts, crushed
1/2 gallon peppermint ice cream, slightly softened
1 16 oz. can fudge topping, slightly heated (the brand of your choice)
1 large carton Cool Whip, slightly softened
Directions
Grease a 9″ x 13″ pan.
Bottom Layer: Crush the Oreo cookies in a blender (or with a rolling pin). Set aside 1/3 cup cookie crumbs for a sprinkled topping. Mix the rest of the Oreo crumbs with the melted butter. Place this mixture into the greased pan. Pat the buttered crumbs evenly throughout the pan.
2nd Layer: Crush the peanuts and place them over the Oreo crumbs.
3rd Layer: Soften the peppermint ice cream, and then place it over the peanut-Oreo mixture.
4th Layer: Heat the fudge topping slightly. Then pour it over the peppermint ice cream.
5th Layer: Layer the slightly softened Cool Whip over the fudge topping.
Sprinkle the top with the set-aside Oreo crumbs.
Cover the dessert with a lid, foil, or Saran wrap. Place in freezer until firm. For ease in cutting, take the dessert out of the freezer about 10 minutes before serving.
